Okay so if you’re feeling like this combo sounds weird – hear me out! Have you ever had a piece of cinnamon raisin bread spread with peanut butter and topped with banana?
If you haven’t, you’ve got to get on that cause you’re totally missing out. But my point is, these flavors all actually work really well together.
This is one of Owen’s favorite breakfasts. I usually make a batch and stick it in a tupperware in the fridge then just heat portions of it for him throughout the week. He never refuses it and he almost always eats the entire thing.
It’s gotten to the point where if I ask him what he’s feeling like for breakfast, he’ll often say “oatmeal” and I know this is the exact one he’s thinking of!
I love it because it comes together in just a few minutes, keeps well in the fridge and reheats well plus it’s providing him some fat, fiber and protein all in one dish.
Not bad for a dish that takes all of 15 minutes and uses mostly ingredients you likely have laying around in your pantry, am I right?

Description

Ingredients
- 1/2 cup rolled or old fashioned oatmeal
- 1 tablespoon chia seeds
- 1/4 – 1/3 cup raisins
- 1 teaspoon cinnamon (more or less as desired!)
- 2/3 cups water or milk
- 1 large ripe bananas (should have a number of brown spots on the peel), peeled & mashed
- 2–3 tablespoons creamy peanut butter
Instructions
- In a non-stick saucepan combine oats, chia seeds, raisins, cinnamon, water or milk and banana. Mix well to combine.
- Turn stove on over medium heat and begin stirring. When oats begin to bubble, lower heat to medium low. Continue to stir oats frequently while cooking.
- When the oats are gelatinous and most of the water is absorbed, stir for another minute and then turn off the the heat. Stir in peanut butter with a rubber or wooden spatula to ensure it’s well incorporated *see note
- Serve.
Notes
- If storing for later, you can choose to omit the peanut butter and add in with each individual portion as you reheat.
