I bought Owen some carrot date bars on a whim at the grocery store the other week and he loved them so much that I decided to come up with a recipe of my own that I could make.
Luckily there’s only a handful of ingredients in these and they’re all stuff I pretty much always have on hand!
I jazzed mine up a little more than the store-bought version by adding walnuts, coconut and raisins so it felt more like an authentic carrot cake flavor.
And let me tell you, I tried both and these were 1000x better.
I rolled half the batch into larger balls which I rolled in coconut and half the batch in mini balls for Owen and omitted the coconut.
Even without the coconut, these things are just plain good. And so stinking easy. I hope they’ll serve you well too, since I know many of you are always looking for quick/easy/portable snack ideas!

Description
these easy carrot cake bites come together in the food processor with just 7 ingredients. they’re great for crumbling over yogurt or throwing in your bag for a grab & go option.
Ingredients
- 2/3 cup dates, pitted and roughly chopped
- 3 tablespoons raisins
- 1 large (or two small) carrots, peeled & roughly chopped
- 1 cup walnuts
- 2–3 tablespoons shredded coconut (plus more for rolling as desired)
- 1 teaspoon vanilla
- 1/2 teaspoon ground cinnamon
Instructions
- Place all ingredients in a food processor and and blend until finely chopped & well combined (dough should stick together when pressed)
- Using a cookie scoop, scoop into balls (or press into an 8×8 pan to make into bars if desired!)
Notes
- If dough is too sticky to scoop initially, cover and place in the fridge for 1 hour +
- Store bites in an airtight container in the fridge.
