this easy smoothie uses mainly freezer and pantry staples making it perfect for our current situation!  loaded with berry lemon flavor and oh-so-creamy, it takes just minutes to make and is totally satisfying!

Since so many of you told me frozen fruit is something you have on hand during this quarantine period, I wanted to come up with a quick and easy smoothie recipe that just screamed springtime for you to keep in your back pockets when and if you need the inspiration!

To me there are few things better than the berry / lemon combo, so it felt like a no-brainer to make a smoothie featuring both flavors!

Aside from the flavor, I love that this smoothie relies mostly on freezer & pantry staples and takes just a handful of minutes to pull together (while only dirtying the blender!).  It pretty much checks all the boxes I’m looking for with meals lately: ingredients I have on hand, comes together quickly and only dirties one dish!

I also always like to add yogurt to my smoothies because it gives such a creamy texture.  For this one I threw in 4% mixed berry siggi’s yogurt (you can swap their mixed berry plant-based blend for a non-dairy version!) whose simple ingredients not only lend that great texture, but also bump up the protein and add even more mixed berry flavor to the smoothie.  Siggi’s lower sugar content also allows the natural sweetness of the berries to shine.

This smoothie will work with any berry you have on hand so if you only have strawberries or blueberries, it’ll still taste great!  Use what you have and make adjustments as needed to make it work for you and your tastes!

Description

this easy smoothie uses mainly freezer and pantry staples making it perfect for our current situation!  loaded with berry lemon flavor and oh-so-creamy, it takes just minutes to make and is totally satisfying!


Ingredients

Scale
  • 1 banana
  • 1/2 – 2/3 cup frozen mixed berries (fresh will also work!)
  • 1 4.4 oz. container siggi’s mixed berry yogurt (you can also use 1/3 cup siggi’s non-dairy mixed berry plant-based blend for a dairy-free version)
  • 1/3 cup oats
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon lemon zest
  • 1–2 tablespoons lemon juice
  • 1–2 cups milk (any variety)
  • Optional garnish: fresh mixed berries, granola, lemon wedge

Instructions

  1. Combine all ingredients (except for milk and garnish) into a blender.  Add 1 cup of milk and blend. Add additional milk as needed for desired consistency. 
  2. Pour into a glass (or glasses!) and garnish with any desired toppings.
