Happy Sunday my friends!

It was a busy week! We were back to school after our holiday break but we managed to take advantage of the unseasonably warm weather and squeeze in some fun at the park and some sunset walks.

I whipped up two of my favorite easy dishes to be able to reheat for quick meals this week – my spicy black bean & veggie farro bake (which absolutely never disappoints) and my super fast tofu cauliflower stirfry.

Also heavy in my rotation lately is roasting up some broccoli florets (I toss them generously with olive oil, sprinkle with salt then roast at 425*F for 25-30 minutes), tossing it with pesto pasta (the barilla protein line has been a household favorite lately) then topping the whole thing with parmesan or feta. It’s delicious, easy and budget-friendly. Sometimes we’ll throw in chicken sausage or roasted chicken or even turkey meatballs but it’s great just as is too.

And finally, I’m still devouring bowls of my beloved cinnamon raisin apple walnut oatmeal.

I’ve already got a couple good books under my belt this year with Malibu Rising being my most recent finish (super quick & entertaining, highly recommend, especially if you’re read her other books as she weaves in those characters and stories) and added plenty more to my “Want to Read” list. I do a mix of both audio and reading. I prefer reading, but with the kids always on the go, I often find it’s easier to get through a book if I do the audio version.

I’ve also pulled my The Making Peace with Food card deck out as I start creating content for the new year. I feature this in my recommended ditch dieting reading list, but if you’re new to the journey of making peace with food and ditching diet culture, I highly recommend these cards. They’re quick bites of important and useful advice to help you on your healing path.
